Kochere is a small area within Yirgacheffe, a well-known coffee-growing region in the southern Ethiopian highlands, about 250 miles southwest of capital Addis Ababa. The iron-rich, acidic soil and extreme high altitude found in this part of the country are ideal for growing specialty coffees and account for the liveliness and brightness of the varieties from this area. The ripe cherries are harvested at small farms and taken to community stations for a washing process that maintains the purity of the bean for a clean flavor profile.
