“Trying Ideas” is the mission in the Marcala region of Honduras, where a small group of coffee farmers at the Probando Ideas farm allow their love of coffee to shine through in the beans they produce. With every sip of this medium roasted coffee, you will taste their shared passion for coffee with layered notes of dark chocolate, stone fruit, and currant.

    Product Description

    The Probando Ideas (translation “Trying Ideas”) farm is run by Jose Guevara, his grandmother, and two neighbors. The core mission of this small group is to work together to experiment and innovate with coffee. Jose started farming and producing coffee thanks to his parents and grandparents, who were pioneers in the industry. His determination to succeed and love for coffee outweigh any obstacle. As the lead producer, Jose explains that the most important factors for coffee production are the coffee plant varieties, the maintenance of the crops, and the processing. This farm is meticulous about cherry selection. Once harvested, they choose only the ripest cherries by submerging them in water and only processing the higher density/higher quality cherries that don’t float. After de-pulping, the coffee is sorted by a metal screen to ensure uniformity. Then the coffee is fermented for 48 hours, washed, and once again sorted. The final step is drying for 20 to 30 days.
